Recipe of the week: Pine nut, Pesto & Goat’s Cheese Torte

Do you love pine nuts, pesto and goats cheese? This is an easy but impressive idea to have up your sleeve.

Buy your favourite goats cheese at the market from Cranky Goat or Kaikoura Cheese, and don’t forget to pick up some Pinoli Pine nuts too!

To assemble: line a small bowl with glad wrap, then mix the goats cheese with a bit of cream to make it more spreadable. Start with a layer of the goats cheese mix, then a layer of sundried tomatoes chopped up and a sprinkle of pine nuts, then a layer of goats cheese again and then a few tablespoons of basil and pine nut pesto, top it off with a finishing layer of goats cheese.  Refrigerate until firm. Bring out of fridge 20 minutes before serving, upend and peel off glad wrap, drizzle  with olive oil and a few toasted pine nuts for good measure.  Great with drinkies and crackers. Try the great crackers on offer at Mississippi Herbs!  Enjoy.

This week we have the Manaaki Aunties showing you how to whip up an antipasto platter that will really wow your guests.  Manaaki means hospitality, and we look forward to the Manaaki Aunties demonstrating their hospitality at their colourful Manaaki Kai Kart this Sunday.

Manaaki is a range of delicious handmade preserves and condiments, from the Marlborough region, using traditional Maori ingredients with a modern twist. The Aunties will be pairing the Manaaki range with fare from Farmers’ Market stalls. Come and learn how to create mouth-watering platters and find out more about our indigenous ingredients.
